Montepulciano and Merlot grapes. Manual selection of bunches harvested in slight overturning: Montepuciano grapes at the end of October, Merlot grapes before the first decade of October. This wine is obtained by the separate winemaking of the two varieties of grapes.
The maceration with the skins was differentiated: Merlot 12 days, Montepulciano 16 days. The wine was poured into wooden barrels and left to rest until the end of malolactic fermentation. It was then poured and refined in wood and steel.
