The qualitative selection of Tomato Tomato Sauces begins in the same cultivation fields by choosing the best organic soil, the best sun exposure and the best varieties. The companies from which tomatoes come from Tuscany and adjacent areas are also selected according to their latitude so as to ensure a constant flow of tomatoes with the same degree of ripening.
By privileging sweetness as the optimum point of maturation, the collection is carried out today, with the help of mechanical means, and the subsequent transformation in the shortest possible time.
To keep all the freshness and perfume of the fruit perfectly mature and freshly picked, the processing has to take place in a very short time. After several washing cycles, the tomatoes are manually selected and immediately processed into juice, pulp or sauce, with fast cooking and low temperatures, essential to preserving the fragrance. Even the added aromas such as garlic, onion, carrot, celery and chili pepper are always fresh; Basil, in particular, is cultivated by us with great care and harvest, with loving dedication, by Mom Renza and then manually added in each container.
